Macadamia and White Chocolate Cookies shared by , ANZ

This recipe is adapted from the Australian Women’s Weekly

Ingredients
  • 1 cup (220g) firmly packed brown sugar
  • 1/2 cup (110g) caster sugar
  • 1 1/2 cups (225g) self-raising flour
  • 1/2 cup plain flour (75g) plain flour
  • 185g butter, melted, cooled
  • 1 egg, beaten lightly
  • 1 egg yolk, beaten lightly
  • 2 teaspoons vanilla extract
  • 200g white choc-chips or chopped chocolate
  • 1 cup coarsely chopped macadamias
Method

Preheat oven to 180C (350F). Combine sugars, sifted flours and nuts in a large bowl. Add combined butter, egg, egg yolk and vanilla extract, mix to a soft dough. Stir in choc chips. Place 2 level tablespoons of biscuit dough, about 6cm apart, on lightly greased oven trays Bake in moderate oven about 16 minutes or until browned lightly. Cool on trays.
