Middle Eastern Tuna Couscous Salad shared by , Heinz

This salad is wonderful served as a light lunch or dinner. It also goes nicely with other grilled fish and seafood dishes, so will make a great addition to your next barbeque.

Ingredients
  • 2 tbsp slivered almonds
  • 2 tsp olive oil
  • 1 red onion, sliced
  • 1 tsp garam masala
  • 1 cup couscous
  • 2 tsp finely grated orange rind
  • 425g can Greenseas Tuna Chunks in Oil, drained
  • 200g thinly sliced roasted red capsicum
  • ½ cup fresh coriander leaves
  • yoghurt, for serving
Method

Heat a frying pan, add almonds and cook for 4-5 minutes or until golden. Set aside. Add oil to pan and cook onion and garam masala for 2-3 minutes, or until onion is tender and spice is fragrant. Pour 1¼ cups boiling water over combined couscous and orange rind, cover and allow to stand for 3 minutes. Fluff with a fork and stir in almonds, onion mixture, Greenseas tuna, capsicum and coriander. To serve, accompany with yoghurt.
