Origins: MOROCCO

Moroccan patties served with yoghurt and herbs makes for a simple and tasty lunch or light dinner!

Ingredients
  • 2 medium potatoes, boiled and mashed
  • 425g Greenseas Tuna Chunks in Springwater, drained
  • ½ cup fresh breadcrumbs
  • 1 egg, lightly beaten
  • ½ cup fresh coriander leaves, finely chopped
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • ¼ tsp ground cinnamon
  • 1 tbsp olive oil
  • ½ cup natural yoghurt
  • 1 tsp finely grated lemon rind
Method

Combine potato, Greenseas Tuna, breadcrumbs, egg, half the coriander and spices. Mix well. Form into 8 patties and allow to cool. Heat oil in a frying pan over medium heat, cook for 3-4 minutes on each side or until golden. Combine yoghurt, lemon rind and remaining coriander in a small bowl, mixing well. Serve patties with yoghurt sauce and crisp salad.

It's a very good recipe. I thing, if using sweet pototoes maybe more health.
