Spanish doughnuts that are pure chocolate heaven
- 250ml milk
- 100g unsalted butter
- 110g flour
- 2 vanilla beans
- 1tbsp caster sugar
- 3 egg yolks
- 1 egg white
Bring to the boil the milk, vanilla, sugar and butter. Cooldown till warm. Sieve the flour into the water, whisk until smooth add one egg yolk a time and white at the end till silky. Pipe into hot oil 170C with star nozzle. Pat dry and dust with caster sugar.
For chocolate sauce use 1kg of chocolate and melt with 1 litre of condensed milk, splash of rum and milk to thinner consistency.
