Lancashire Hot Pot

800g Beef Stewing Steak
1 x large onion
4 x large carrots
800g potatoes
500ml Beef Stock Salt & Pepper

1. Roughly chop all the vegetables

2. In a heavy-based pan on the stove (you'll need one that can also go in the oven) fry meat off in a little oil until sealed

3. Add the onion, carrot, potatoes and stock

4. Bring to the boil until you see fat on the surface - skim this off the top and throw away.

5. Once most of the fat has been discarded, put in the oven at 160C for one and a half hours.

6. Serve with shortcrust pastry and HP sauce.
