Adobo is considered as the signature dish of the Philippines. Almost all meats, seafood, and vegetables can be cooked using this method.
1 kg pork, cut into cubes
1 kg chicken (any part will do), cut into small portions
1/2 cup soy sauce
1 cup vinegar
1 head garlic (crushed, whole or minced, as you wish), separated to 2 portions
1 medium-sized white onion
2 tbsp cooking oil
10 whole peppercorns
1-2 Laurel (bay) leaf
1/2 cup water
