Corn chowder
'Soup is really the ultimate comfort food, and making it is an act of love and generosity. This is one of my absolute favourites, a filling soup combining the best flavours and textures for a real hug in a bowl.', Julie Goodwin.
  • 4 cobs corn, husk removed
  • 1 tablespoon olive oil
  • 4 rashers bacon, rind removed, cut into thin strips
  • 1 brown onion, chopped
  • 4 medium sebago potatoes (about 700g), peeled and diced into 1cm pieces
  • 1 litre chicken stock
  • ½ cup cream
  • Salt and finely ground white pepper

1 shallot (green onion) finely sliced
