450ml olive oil
250g caster sugar, plus extra to sprinkle
900g plain flour
2 tsp ground cinnamon
1 egg, beaten
Preheat oven to 175C. Line baking trays with baking paper.
1. Combine oil, sugar, flour and cinnamon in a bowl until a dough is formed.
2. Roll dough out between 2 sheets of baking paper to 1cm thickness. Remove top baking sheet and using cutters, cut out different shapes (hearts, diamonds, squares and circles).
3. Transfer to prepared trays and brush with egg and sprinkle extra sugar. Bake at for 15-20 minutes until golden brown. Cool.
Tip: My cutters were about 5cm wide. Could use smaller cutters and make more biscuits if you would like.
