Salted egg prawn is a famous dish at Chinese restaurants in Malaysia and Singapore. Luckily, thanks to this recipe, I don’t need to go to restaurants anymore to enjoy this dish.
400g medium large prawns, cleaned and feelers trimmed
1 egg white
2 tbsp corn flour
Oil for deep-frying
3 salted duck egg yolks
40g butter
1 tbsp oil
3 tsp chopped garlic
3 tbsp chopped shallot
1 tsp chopped red/ green small chilli
1 Fresh curry leaf
