Toolum

• 1 cup molasses
• 6 cups of grated coconut
• 1/4 cup orange peel finely chopped
• 1 tbsp grated ginger
• 4.5 cups of brown sugar

Heat sugar until it liquefies. Add the molasses and coconut, stir until well blended. Combine the orange peel with the ginger and continue to cook on low heat, stirring until mixture easily leaves the side of the saucepan. Remove from the heat and drop by tablespoon on a lightly greased tray.

Allow to cool and harden. Store in an airtight container.
