Make your own Jamaican spice in less than 10 minutes and cook up a storm.
- 16 lamb loin chops
- 2 limes
- 2 tbsp sea salt flakes
- 2 tbsp dark brown sugar
- 3 tsp dried thyme
- 2 tsp ground allspice
- 1 tsp coarsely ground black pepper
- 1/2 tsp ground nutmeg
- 1/2 tsp ground cinnamon
- 1/2 tsp cayenne pepper
Finely grate rind of 2 limes and combine with 2 tbsp sea salt flakes, 2 tbsp dark brown sugar, 3 tsp dried thyme, 2 tsp ground allspice, 1 tsp coarsely ground black pepper, 1/2 tsp ground nutmeg, 1/2 tsp ground cinnamon and 1/2 tsp cayenne pepper in a mortar and pestle. Grind until a fine salt forms. Sprinkle mixture evenly onto both sides of the chops. Cook on a preheated barbecue plate for 3 minutes each side for medium-rare or until cooked to your liking.
