Perfect for an Aussie afternoon tea.
- 1 cup (220g) firmly packed brown sugar
- 1/2 cup (110g) caster sugar
- 1 1/2 cups (225g) self-raising flour
- 1/2 cup plain flour (75g) plain flour
- 185g butter, melted, cooled
- 1 egg, beaten lightly
- 1 egg yolk, beaten lightly
- 2 tsp vanilla extract
- 200g white choc-chips or chopped chocolate
- 1 cup coarsely chopped macadamias
Preheat oven to 180C. Combine sugars, sifted flours and nuts in a large bowl. Add combined butter, egg, egg yolk and vanilla extract, mix to a soft dough. Stir in choc chips. Place 2 level tablespoons of biscuit dough, about 6cm apart, on lightly greased oven trays Bake in moderate oven about 16 minutes or until browned lightly. Cool on trays.
