Scottish salmon is all the rage and this dish is a real winner
- Salmon
- Potatoes
- Tomato
- Onion
- Zucchini
- Parmesan
- Flat leaf parsley
- A little chilli and garlic
- Cashews
- Lemon juice and olive oil lemon oil and olive juice won't work
Throw the ingredients into a mortar and pestle and mash it. Spread the crust on to salmon (one side). Place on grill crust side down. If you preheat the grill this helps the fish to cook from both sides. No need to flip the fish, it should be cooked through by the time the crust is crispy.
Serve with potatoes sauteed in olive oil, garlic and a tomato, onion, zucchini and parmesan bake. Slice tomato, onion and zucchini evenly and layer in a Pyrex dish, sprinkle with parmesan then bake it.
