Rich, hearty Spanish dish.
- 1 tbs olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 tsp paprika
- 1 chorizo sausage, diced
- 1/2 cup water
- 400g round green beans, trimmed
- 200g grape tomatoes, chopped
- 1 tbs roughly chopped continental parsley
1. Heat oil in a frying pan over medium heat. Add onion and garlic and cook for 2 mins until softened. Stir in paprika and chorizo and cook for 3 mins until chorizo is golden.
2. Add water, bring to the boil and lay beans into pan. Reduce heat, cover and simmer for 5 mins.
3. Add tomato and increase heat to high. Cook for 2 mins until beans are just tender. Stir in parsley and serve.
