Twice-cooked Pork Belly Bites with Fried Ginger

I have many memories that are related to food, and a dish that evokes a vivid memory is this twice cooked pork belly bites with fried ginger and chilli vinegar.

My family is not very affluent so in Malaysia, so mum would normally cook in bulk and we would have stuff the following day. As kids we used to sort of groan about it but the only thing I didn’t complain about was when she cooked this pork-belly dish because it actually tastes better the next day.


  • 800g boneless pork belly

  • 4 tbsp Asian cooking caramel

  • 2 tbsp hoisin sauce

  • 1 cup good quality chicken stock

  • 4 tbsp caster sugar

  • 2 star anise

  • 1 tsp cracked black pepper

  • 4 tsp fish sauce

  • 4 tsp minced ginger

  • 2 tsp sesame oil

  • 1 cup finely sliced ginger, deep fried to a crisp
