To make snakehead sour soup, you need the following fresh ingredients:
Raw ingredients
800g fillet barramundi/peeled prawns.
2-3 stems of “Bac Ha” (Taro Stem) (optional)
1/2 ripen pineapple.
2-3 Tomatoes
10 okras (optional)
1-2 chillies (optional)
150g bean sprouts
Minced garlic, red onion, cilantro (Optional), green onion, Thai basil and coriander for garnishing, tamarind paste (1-2 tablespoons mixing with 1 tablespoon of lukewarm water.
Pantry ingredients
Seasonings: sugar, salt, seasoning, fish sauce, MSG (optional), cooking oil
Cooking instructions:
Step 1: Preliminary processing of raw materials
To remove the fish’s fishy and viscous smell, use salt and 1 sliced lemon to rub on the fish and gently rinse. Cut into bite-sized slices.
Marinate the fish with a pinch of salt, seasoning seeds and chopped red onion for about 20 minutes to absorb the seasoning.
Okra cut off the tip of the tail into bite-sized pieces and washed pineapple sliced into thin pieces. Taro stems -along the nets, strip the peel, thinly slice, and squeeze well with salt.
Tomatoes were washed in warm water and drained to remove seeds. Garlic peeled and finely chopped; chillies (optional) thinly sliced.
Step 2: Cooking soup
Turn on the burner and put in a saucepan of less fragrant, non-aromatic oil 1 onion and 2 cloves of chopped garlic; at this point, add the fish; when the fish is cooked on both sides (try to turn the fish over once or twice only to not break the fish up into pieces), add 500ml water, or just enough to eat/to cover the raw ingredients. Also, add the pre-prepared pineapple, tomato, and tamarind juice.
When boiling, season to taste and remove the foam to clear the broth; add okra along the taro stems and cook for another 2-3 minutes.
Add the bean sprouts, chopped cilantro, coriander, green onion, and Thai basil, and turn off the burner.
Step 3: Serving the soup with steamed jasmine rice!
