Authentic Western Vietnamese Sweet and Sour Soup Recipe

Sweet and sour soup cooked in Western Vietnamese style is a rustic dish that is very attractive. Being born in the far countryside of Western Vietnam, this is one of the dishes I grew up with that I crave in adulthood.
Western-style sweet and sour soup is usually cooked with snakehead fish as the meat is firm, tender and fragrant, combined with a sweet and sour broth, promising to be a dish that will appeal to your family's meal. However, you can substitute the snakehead fish with barramundi or prawns, or it tastes delicious as a vegetarian dish.
To make snakehead sour soup, you need the following fresh ingredients:
Raw ingredients
 800g fillet barramundi/peeled prawns.
 2-3 stems of "Bac Ha" (Taro Stem) (optional)
 1/2 ripen pineapple.
 2-3 Tomatoes
 10 okras (optional)
 1-2 chillies (optional)
 150g bean sprouts
 Minced garlic, red onion, cilantro (Optional), green onion, Thai basil and coriander for garnishing, tamarind paste (1-2 tablespoons mixing with 1 tablespoon of lukewarm water.
Pantry ingredients
 Seasonings: sugar, salt, seasoning, fish sauce, MSG (optional), cooking oil
