Sweet and sour soup cooked in Western Vietnamese style is a rustic dish that is very attractive. Being born in the far countryside of Western Vietnam, this is one of the dishes I grew up with that I crave in adulthood.

However, you can substitute the snakehead fish with barramundi or prawns, or it tastes delicious as a vegetarian dish.

To make snakehead sour soup, you need the following fresh ingredients:
Raw ingredients
800g fillet barramundi/peeled prawns.
2-3 stems of "Bac Ha" (Taro Stem) (optional)
1/2 ripen pineapple.
2-3 Tomatoes
10 okras (optional)
1-2 chillies (optional)
150g bean sprouts
Minced garlic, red onion, cilantro (Optional), green onion, Thai basil and coriander for garnishing, tamarind paste (1-2 tablespoons mixing with 1 tablespoon of lukewarm water.

Seasonings: sugar, salt, seasoning, fish sauce, MSG (optional), cooking oil
