- Kingfish fillet, clean and pin boned
- Ginger
- Celery
- Garlic
- Coriander
- Limes
- Spanish onions
- Sweet potato
- Star anis
- Sugar syrup
- Vodka
Dice fillet 1x1 cm cubes.
Puree ginger, celery, garlic, chilli and coriander. Mix puree in a bowl with squeezed lime juice, fish and fresh chilli. Thinly slice Spanish onion (rinse in cold water). Pick coriander.
Turn sweet potato and poach in sugar syrup.
Pour leftover juices in the bowl mix with vodka and serve.
