I cook food that always has a foundation in the Italian heritage. Having said that though, like any region in Italy, the food and culture evolves with the influence of its environment be it the climate, the produce or the people.
This is why you see such diversity across the regions in Italy and why I refer to my cooking as Melbourne Italian.
