To make the Vegan Power Bowl, you will need:
– 1 x Plantain
– 1 x serve of quinoa
– 1 x handful of squash
– 1 x serve of kale
– 1 x serve live green shoots (bean sprouts/snow pea shoots)
– 1 x 33g packet of The Ja Joint Jamaican Jerk (medium)
– Frying oil
To make the dipping sauce, you will need:
– 1 x carton of Kara coconut cream
– 1 x handful of roasted garlic
– 1/2 habanero chilli
– 1/2 lemon
– A pinch of sugar
– A pinch of salt
– A pinch of pepper
To make your Jamaican Vegan Power Bowl:
1. Cook one serve of quinoa, following packet instructions
2. Heat oil in a deep frying pan for your plantain
3. Wash and cut all your veggie components and separate your cooking veg with your raw veg. Put your kale, plantain and squash to one side and snow pea shoots to the other.
4. Start deep frying your plantain, turning intermittently.
5. When plantain is golden brown, remove from the pan and into a large bowl.
6. Sprinkle The Ja Joint Jamaican Jerk Rub all over the plantain in a bowl, toss the flavour through so all the plantain gets covered in the jerk spice. Set aside.
7. Start frying your squash and kale, add seasoning as you go
8. Take a large bowl and bring all the components together. Serve with the dippy sauce sitting in the middle.
To make the dipping sauce:
1. Roast the handful of garlic in an oven until the garlic is soft and caramelises
2. Pour around 125ml of kara coconut cream into a bowl
3. Add chopped habanero chilli to the coconut cream mix
4. Add pinch of salt, pepper and sugar
5. Add the half lemon
6. Add some water to thin out the sauce
7. Mash up the roasted garlic, add to the sauce and mix together.
Taste and adjust the sauce to your taste buds. Serve sitting in the middle of the power bowl.
